I have raved about the incredibly talented, (and crazy stylish!) chef Marcus Samuelsson here before, and this months’ recipe is yet another amazing staple I’ve learned from one of his wonderful cookbooks. This streamlined pickling process is such a cinch, you won’t ever need to look back at this recipe after you’ve pickled your first batch. I actually made these bad boys at the end of the winter, when I wasn’t able to get through all the vegetables that my kick-ass winter CSA bestowed upon me. This was a great way to make sure my kohlrabies, beets, daikon radishes, and carrots didn’t go to waste before I had a chance to use them.

But. In all honesty, I think spring & summer is the best time to get your pickle on: picnics, BBQ’s, beach days… Burgers, seafood sammys, charcuterie boards, (oh my!)… They’re all screaming for some sweet & tangy garnishes. Happy pickling!

For the pickling liquid:

3 c boiling water

2 c white vinegar

1 c sugar

Liberal pinches of the following: kosher salt, turmeric, assorted peppercorns coriander seeds, (toasted and crushed)

A few cardamom pods, (toasted & crushed)

A few cloves

A few juniper berries

2 bay leafs

1 shallot, sliced thin

fresh parsley


* You do not have to have EVERY item on this list to make pickles! Just go with what’cha got!

To Pickle:

3 beets, peeled, rinsed, & cut into wedges/sticks/slices

2 kohlrabies, peeled, rinsed, & cut into wedges/sticks/slices

1 small daikon radish, peeled, rinsed, & cut into wedges/sticks/slices

3 carrots, peeled, rinsed, & cut into wedges/sticks/slices

*Pickle whatever you want! Doesn’t need to be these items…


In a medium bowl, combine the boiling water, vinegar & sugar. Whisk so sugar dissolves. Allow mix to cool a bit. Then, stir in the remaining ‘pickling liquid’ ingredients.


Arrange soon-to-be-pickled veggies in jars and pour the liquid in over them. You can enjoy the pickles as soon as the following day—or wait a few days for a stronger pickle. They’ll keep for about 2 weeks.

This month we are focusing on the spice turmeric!  Here is a new one from Dish Deanna:

Turmeric is typically used in a lot of curries, can be used as a substitute for saffron and apparently has great health benefits. It is very vibrant, adding color to any bland-looking recipe and it even has anti-inflammatory properties, helps detoxify the liver, and is a natural pain killer. As I was doing research about this interesting spice, I was reading that many people put it into capsules and ingest it daily. This might be something worth looking into further! I do have to say though, when I heard that Turmeric was the theme of the month I panicked a little. I had no idea what kind of recipe to make. I knew that it is used in many curry recipes but I wanted to do something different. As I was browsing some vegetarian recipes, I came across one for hummus. It didn’t have turmeric in it but I improvised a little and came up with something that I think is pretty damn creative.

Ingredients for the hummus:

  • 2 (15 oz) cans of chickpeas (or garbanzo beans)
  • 3 or 4 garlic cloves
  • 1 tbsp turmeric powder
  • 1 tsp curry powder
  • 1 tsp salt
  • ½ cup olive oil

Ingredients for the pita chips:

  • 1 pkg of pita pockets
  • Garlic powder
  • 3 tablespoons olive oil

You will need:

  • A food processor or blender!
  • An oven or toaster oven


To start, strain the chickpeas and rinse them with water. This will take off any liquids that are still clinging to the chickpeas from the cans.


Measure out all of your ingredients and toss everything into the food processor. Pulse until the mixture is smooth. You may want to open the food processer intermittently and see how your hummus tastes. I found as I was making this that it was very experimental. In order to get the creamy texture I wanted I had to add just a little bit more olive oil. Feel free to be liberal with your measurements – you can’t really mess this up!


After you’ve finished with your hummus, place it into a bowl. I prefer my hummus at room temperature but if you like it cooler, throw it in the fridge! To start on the pita chips, first preheat your oven or toaster oven to 350 degrees. Cut one pita pocket into 4 even triangles and peel apart each side. Lay them flat on tin foil on a baking sheet. You should then brush one side only with olive oil, and sprinkle garlic powder and salt over the pita. Toss them in the oven for approximately 5 minutes (maybe even less). I wouldn’t walk away from the oven because you want to take them out as soon as the edges turn golden brown. I burned the first batch!


When they look about ready, take them out and let them cool. Then get ready to enjoy. You’ve just made homemade hummus and homemade pita chips! CONGRATS!!

Chicory month continues with another take on stuffed endive!

Endive is a curious veggie.  One would think that is a lettuce when in fact it is part of the chicory family which includes bitter leafed vegetables such as radicchio or escarole.  Endive, not just for salads, takes on various forms of deliciousness and can be prepared in a multitude of ways.  I have had Belgian endive au gratin, in salads, soups and even stir-fry’s, all delicious.  Perhaps one of the best characteristics of endive is the way the leaves, when separated, create perfect cups for stuffing.  Stuffed endive seems to be a staple passed hors d’oeuvres at events.  Recently my pals were hosting a house warming party and I decided to stuff some endive and bring it over to share.  They were mess free and tasty if I do say so myself.

4 Belgian Endive Heads (there are about 8-10 leaves per head)

½ cup of gorgonzola cheese, crumbled

½ cup of dried cranberries chopped

½ cup chopped chives

2 tbsp olive oil

Salt and pepper


Wash and dry your endive and set aside.  Next you will want to dice up all of your other ingredients and mix in a large bowl adding the olive oil a little at a time while mixing.

Taste and add the salt and pepper as needed.  You can prepare this mixture several hours before serving.  When you are ready to serve, separate the endive leaves and place on a platter, stuff and devour.

While being an extremely easy recipe to make, the presentation is beautiful with all colors and textures and your friends will LOVE it!  At least mine did.

I know it’s freezing out, but I am an ice cream maniac who finds any excuse to whip up a homemade batch. My latest ice cream intention was for a New Years Eve party I co-hosted for some dear friends who recently got engaged, (Congrats DZF & VMF!)… A party at the Whisk & Ladle ain’t no party without ice cream cones served around midnight, so I got to work.

2 c buttermilk (try to get full fat if you can find it)
2 c heavy cream
5 egg yolks
¾-1 c sugar, give or take
pinch of salt
zest & juice of 1 lemon

*you’ll also need some sort of ice cream churning apparatus


Gently bring buttermilk & heavy cream to just under a boil in a medium stockpot. While it’s warming, crack your eggs and toss yolks into a med sized bowl. Whisk sugar (start with ¾ c) into yolks once liquid is up to temp.


Now you’ll need to temper your yolks, which is the one delicate part of this recipe: If you’re doing this alone place yolk bowl atop a pot holder/dish towel so it doesn’t slide around your counter. Using a liquid measuring cup with a spout, scoop up 1c of the warm mixture. Begin whisking yolks with one hand. Don’t stop. Use other to pour the hot mixture into yolks in a very slow, steady stream. Don’t stop whisking. Once it’s all in there you can dump the tempered yolks back into the stockpot. Over a med-low flame, continue to cook custard, stirring constantly. Add dash of salt. Taste the custard to see if you’d like to add a little more sugar, (do that now if so). You’ll know it’s ready when the custard thickens and coats the back of a wooden spoon.


Immediately remove custard from pot and pour into metal bowl. Ice-bath it to cool it down before storing it in fridge, (meaning, place the metal bowl of hot custard into a larger bowl full of ice & cold water. Stir to speed up cooling process).


Leave the custard in fridge until it’s as cold as the fridge, (either overnight or about 3 hours). Once the custard is cold, zest & juice your lemon. Toss the zest & half of its juice in. Taste the custard and decide if you want to add the remaining lemon juice.


Now you’re ready to churn this delicious batch of ice cream!  Serve some killer ice cream cones to your favorite peeps. Happy New Years y’all!

This is a fabulously quick & snappy recipe, easy to whip up in a matter of moments. I must give attribution where it’s due, as this recipe was passed on to me from Dish Amelia, (Thanks ATC!). I’ve made these zucchini pancakes countless times for my private clients (they LOVE them!) and for myself (of course!) when in need of a low maintenance appetizer/side dish. Now that the semester has started and work is busier than ever, super speedy recipes are once again becoming my go-to’s… Enjoy!

3 6-8” zucchinis, grated, salted, and set in a colander in the sink to drain
½ c flour
1 egg
4 thinly sliced scallions (more or less to your liking)
fresh chopped dill
freshly ground black pepper
zest of 1 lemon
8 oz plain greek yogurt
2 garlic cloves, minced
squeeze of fresh lemon juice
a little more dill & scallions

Let your zucchinis drain for about 30 minutes or so. While they’re drying out, prepare the rest of your ingredients: zest your lemon and chop your fresh herbs. Squeeze the grated zucchini in your hand to get the last bit of moisture out and toss into a medium bowl. Add the flour, egg, dill, pepper, & lemon zest to the bowl and stir with a fork to mix thoroughly. It’s almost time to fry these babies.

Now, fill a cast iron up about 1’’ deep with oil. I like to use grapeseed but veggie or canola will also do. Place the pan over a medium-high flame and wait for the oil to get hot.

While waiting, mix the garlic & lemon juice into the yogurt. Toss a bit of leftover herbs in there as well and stir. The pancakes are delicious with a bit of this yogurt on top — kind of a slap-dash version of tzatziki, (heck, if you have a cucumber around toss that into the yogurt too and then you’re a little more authentic…) 😉

Scoop a small bit of mixture out and set it into the oil — if it starts frying, you’re good to start your first batch. If it doesn’t bubble/make frying sounds, increase the heat a bit and wait a few more moments. I use a medium sized spoon to scoop the mixture into the oil. These are free form, so don’t worry about them all being the same size/shape. Fry them off in batches, you want a deep golden color.

Set the finished pancakes on a paper towel to drain. Once you’re finished serve immediately!

If you’ve been following Saucy Little Dish, then you might have figured out something I love to do is make at-home versions of food items one can easily purchase at the store. Sometimes the end result is way more awesome than I could ever expect (English muffins, peppermint patties, peanut butter cups). And sometimes, after laboring away for hours, covered in batter and flour from head to toe, the store-bought version reigns supreme (I’m looking at you Milano cookies). The other day, I stumbled on this recipe for homemade cheddar cheese crackers (a.k.a. Cheez-Its or Cheese Nips) and I just had to make them. The verdict: Super delicious, super flaky, and totally worth it!

8 oz. extra sharp cheddar cheese, grated
4 tablespoons butter or vegetable shortening (vegetable shortening will give you a flakier cracker, but some people find it gross)
1/2 teaspoon salt
1 cup all-purpose flour
2 tablespoons cold water
coarse salt

Combine shredded cheddar, butter or shortening and salt until well combined. Add in the flour and rub in with your hands until it resembles a coarse meal with some larger pea-sized pieces. Add the water and mix until combined. Knead just a little bit to form a cohesive ball. Cover in plastic and refrigerate at least 30 mins or over night.

Preheat the oven to 375 degrees.

Roll out the dough into a thin rectangle and cut into 1-inch squares. Place the squares on a sheet tray lined with parchment and sprayed with non-stick spray. With a skewer or toothpick, poke a hole in the center of each square. Sprinkle with coarse salt and bake 10-15 minutes until golden brown (mine took 13 minutes).

Eat as a snack, or float on top of tomato soup. Stores for a day or two in an air-tight container. Will not last more than an hour if you live in a house like mine.

Are you guys sick of seeing the top of my clothes dryer in all my Saucy pics? I am. Are you tired of pitying me and my 22 inch stove top and oven? I know I am tired of not being able to have more than two things bubbling on the stove at once, or an oven that JUST FITS a half sheet pan. It’s the end of an era. We’re moving this weekend.

The next time you see me, I will have a new kitchen – brand new – even all the appliances. Well actually, you will probably see me mid-reno – just using the bathroom sink and the grill outside – but THEN I will have a brand new kitchen!

But this week it’s all about packing our house, supervising the workers putting in new lights, floor, paint and getting the RENTAL UNIT ready to go. Yes, we are crazy and bought a duplex. We’ll live in the back and rent out the three bedroom front unit to help cover our mortgage. (I am starting to document this adventure here: http://soweboughtaduplex.blogspot.com/.  EEPS!

My amazing parents came this week to help us out and it’s been wonderful to have them finishing tasks, being around for deliveries and helping us pack. Last night, my mom and I did a big Fridge Clean Out Dinner – We made a mushroom, onion and broccoli fritatta, Neal made a crisp arugula salad and we decided to use up as much of the random crap in our cupboards for dessert. This turned into a quick bread packed with yummy things that may not have had a home in our new place. This was the combo we used – you can put in any stuff you want – chocolate chips? craisins? Other nuts? Use the dry ingredients, eggs and bananas as your base.

We also found a 4-year-old can of Four Loko we bought to try and have been too scared. It’s probably a collectors item. It’s from before they deemed the mix of caffeeine, alcohol, energy drink and what must be liquid plumber illegal. Why not throw that in too?


2 cups flour
1 1/2 cups sugar
1 tsp baking soda
1/2 tsp salt
Three old bananas that have been in your freezer for months
2 eggs
4 T butter, melted
One can of contraband Four Loko
One bloop of almond oil because it was in your cupboard and why not
1/2 C of chopped pecans so you can wash that cute glass jar and pack it
1/2 C of toasted coconut from Oliver’s 2nd Birthday Dinosaur cake you made last September
1 C of chopped strawberries that are almost bad after you bought 2 pounds of them on sale this weekend

Preheat the oven to 350 degrees and grease a loaf pan. Take a swig of Four Loko. Combine all the dry ingredients in a big bowl. Mash up the banana in a smaller bowl and mix with eggs, butter and oil. Combine wet and dry and mix until just combined.

Rinse that effort down with a big drink of Four Loko. The fold in the nuts, coconut and berries until evenly distributed.

Put in loaf pan and bake for an hour while you pack 10 boxes or until a toothpick poked in the middle comes out dry or your can of Four Loko is more than halfway gone.

Let cool for 15 minutes or so, then turn out and let cool the rest of the way. Keep snagging slices between trips lugging boxes out to the garage. Probably don’t sleep well because you are so hopped up on Four Loko.
